Our firm is one of a very few following the entire process of production, starting it from the seeding in the fields and completing it with the packing of a rich variety of rice products. Our state-of-the-art tools and machineries are a guarantee of quality from the agricultural phase to the industrial one and offer the privilege of obtaining a product directly from the farm.
The rice cultivation
The enrichment of the ground
One of the keys of Cascina Belvedere cultivation is the use of the "Sovescio Technique" in winter, which consists in cultivating herbaceous plants that are buried when properly grown. The ground is therefore covered and enriched with organic elements.
The seeding is done in lines, so that the airing in the fields is ensured and the product growth healthier. This technique also allows a greater control of weeds, that are easier to be detected and eradicated.
Control of weeds.
It is important to underline that the whole process of biological production is done without any use of pesticides. A first partial seeding is done in Spring, when the fields are being flooded and the growth of weeds eliminated.Subsequently the final seeding is done and manual weeding is undertaken, directly in the fields, by eradicating the resistant weeds.
The harvest is an exciting period at Cascina Belvedere.The Picco brothers and the other members of the family meet to talk and coordinate the crop collection and to make sure that the rice of the year is to an optimal maturity. Most of the other farmers generally hurry in harvesting their rice before any rain or hail occur. We instead proceed to harvest exclusively when the humidity is tested at 16 to 18%, and the rice grains are completely developped and mature. Allowing the rice to dry and mature in the fields means bringing the full taste to the product.
At Cascina Belvedere we cultivate, transform and pack our rice and other rice products. We have the control of every product from the field to the store, assuring quality and taste in every grain.
The Drying Process
After the harvest, the rice moves to the drying falilities where its humidity is reduced and it is prepared for the milling.
Subsequently the rice is kept in storing silos, with the addition of neither preservatives or pesticides. The product is preserved in refrigerated units at temperatures below 8∞C, to avoid natural infestations.
A traditional workmanship
The milling facility within the farm is a major advantage. Every batch of rice is traceable from the seeding to the packing. This allows us to practice a very strict quality control. In addition to this we have chosen to recover traditional workmanship technique. The product is milled in small batches, artisanally, with a husking process which is light and delicate, and results in the preservation of the nutrients and intense taste of grains. Our rice is therefore different from the industrial one, with a superior quality and the best cooking performance. We ultimately combine the traditional values to the effectiveness of technology, using machineries that allow to select each grain, on the basis of their colour, their purity and their dimension. This process eliminates all the small impurities in a natural way and guarantees the homogeneity of the produced batches.
The peculiarities of our rice are kept intact to the table by packing it in vacuum packs and protective atmosphere.
